When I started Slice of Sausalito my goal, to partner with local businesses and farmers that support organic farming. I spoke to Lon Gallardo at Central Milling in Petaluma, CA and was completely inthralled with the history and story behind their business and Lon’s passion for flour. After many questions to insure we had the best match for our pies, we selected their California Organic. This is a single variety wheat called Yecora Rojo. It’s organically grown, milled and distributed in California. Perfect.
